First all of the cornstarch immediately stuck to the bottom of the wok, then it started to burn long before the eggplants had softened. Can you describe that step in a little more detail? What kind of heat should i use? Should i move them around as they cook, or do one side at a time? Should I heat the oil a lot before adding the eggplant?
