This didn’t work for me at all. First all of the cornstarch immediately stuck to the bottom of the wok, then it started to burn long before the eggplants had softened. Can you describe that step in a little more detail? What kind of heat should i use? Should i move them around as they cook, or do one side at a time? Should I heat the oil a lot before adding the eggplant?
