I first made this as a way to use up some ginger and scallions I had in the refrigerator and now I make this recipe every few weeks! I love the way you cut and cook the tofu. I leave out the cornstarch–the sauce is absorbed and very light but I like it that way. I get about 3-4 servings out of this (served with rice and veggies) so it’s a great meal prep recipe. Thank you!!
