Hi, Denny
You can either steam or boil them, but for those who are making shrimp chips for the first time, I recommend boiling them because it is easier. As for using other ingredients, you may be able to get shrimp cracker with different flavors, which is feasible.

This is the second time I’ve ever seen a recipe for home made shrimp crackers. One of these days, I’ll give it a try. The first one I’ve seen is Malaysian recipe and I think their shrimp crackers are the best! The recipe differs from yours in that the shrimp to starch ratio is 1 to 1 and there is added msg and white pepper and no sugar or ginger. Additionally, a small portion of potato starch is used along with tapioca (1 to 9) and the logs are steamed on banana leaf for about 1 hour instead of boiled. Have to tried using a mandolin? That’s how you get super thin slices.
When I finally make shrimp crackers, I will try it using tips from both recipes. Thank you!

I’m glad you can travel to China. April to June is a good time. Most places are warm or even hot, but continuous thunderstorms are not ruled out. You still need to check the weather before your trip. Several famous tourist cities in China, such as Xi’an, Beijing, Guangzhou, Chengdu, Chongqing, Wuhan, etc., have a lot of tourist resources and of course a lot of delicious food. You can enjoy the different exotic customs here. Welcome again.
