I enjoy the simple, easy to follow instructions.
I did it exactly like recipe as my test case-delicious!
Roasting herbs first is a good way to awaken the flavor.
I have thought of numerous variations to your recipe in the future.
I agree, ignore the giant mushrooms & go for medium size. I find a nice variety of mushrooms in natural food store, particularly Rainbow Grocery Coop in San Francisco.

The large ones from China are not nearly as good as the ones one can buy in a Japanese market which come in clusters of 5 or so. So much more tender and flavorful. Huge difference.
